What to do with my leftovers is a constant challenge, but one of my favorite dishes that never fails is making a Mexi-Pizza. Depending on what I have in my fridge pretty much determines what type of pizza we're going to be eating that night which never gets boring. Enjoy!
Ingredients
A use all you leftovers in the refrigerator recipe
1 Flatbread (you can substitute this for a cauliflower pizza crust)
Optional Toppings
Leftover Protein, ie. shredded chicken, pulled pork
Salsa as the binding sauce- we used some leftover tomatillo salsa, but you can use any of your favorite vegetables- you can throw frozen corn or squash right on top
Cilantro
Avocado
Red Onion- Pickled or Fresh
Queso Fresco
Monterrey Jack Cheese
Jalapenos- pickled or fresh
Directions
Top your flatbread with your favorite toppings and bake in the oven at 375 degrees for 10 minutes.
