Mexi-Tropical Tarts



San Antonio summers can be like living in the Sahara... ok maybe not that dramatic but it feels that way when I'm walking across the Target parking lot:) Anyways, during this time I love to make cool treats and desserts to keep in my fridge and help me cool off from a day outside. My favorites include anything with citrus, especially lime. Check out these simple Tropical Tarts that will for sure help you survive summer! 


Ingredients

Graham Cracker Crust

1.5 Cups of finely crushed graham crackers

⅓ cup of melted butter

2 Tablespoons of sugar


Filling

1 Package of Key Lime Instant Pudding

Zest of 1 lime


Toppings

Toasted Coconut

Mango

Kiwi


Directions

1. Mix the items for the graham cracker crust in a bowl and press in a pie tin or mini tart shells. Bake in the oven at 350 degrees for 10 minutes for the large pie tin and 5 minutes for the small tart shells, NOTE: you can also use a pre-made graham cracker crust.

2. Let the crust cool and follow the instructions for the key lime pudding, add in the zest of the lime. Spoon the pudding into each tart or pie shell.

3. Let it set in the refrigerator for approximately 30 minutes- 1 hour.

4. Top with toasted coconut, and fresh fruit.
