One of my favorite agave spirits to mix with has to be Mezcal... There are literally dozens of different varietals and for the most part they all have an essence of tequila, being made with agave but also a nice smokey finish.
For this reason, it pairs beautifully with flavors that are bright, citrusy, or floral, and it is surprisingly easy to mix with.
For this cocktail
2 oz Mezcal
.5 Oz Elderflower Liqueur, St. Germaine
Juice of 1 blood orange.
add all the ingredients to a shaker with ice, and shake for vigorously for 10 seconds. Lots of people don't shake long enough, but you really want the ice to break down some of the sugars in the juice and it just helps everything meld together nicely.
