Who doesn’t love an easy crockpot meal, especially to start off the week, this recipe is so flavorful and it’s an easy way to spice up some pantry and refrigerator staples.
Chicken Tinga, is one of those easy recipes, you’ll find yourselves coming back to it time after time, add additional spice depending on how you like your heat level. There is a pork variation of tinga as well, that recipe is coming soon!
Ingredients
2 lbs of Chicken Thighs or Breasts
1 can of crushed tomatoes
1-2 chipotles in adobo, (from a can)- depending on how spicy you want it
Garnishes
Corn Tortillas
Avocado
Queso Fresco or Queso Cotija
Directions
Cook the three ingredients in a crockpot on high for 3-4 hours, when tender, shred with two forks and serve on either crispy tostadas or corn tortillas. Commonly topped with avocado and queso cotija.
